Hyatt Lime 2024: Carnival Vibes & Culinary Delights!
LIME is an ultra, all-inclusive event held at the Hyatt Regency Trinidad on the Wednesday before Carnival. Started in 2010, I’ve been attending regularly since 2014. Over that time it has become a cherished tradition for me, spanning many years of indulging in culinary delights and immersing myself in the joyful ambience that defines this event. From its genesis in 2010, to its present-day status as a highlight of the Trinidad Carnival season, Hyatt LIME has consistently offered a wide range of exquisite cuisines prepared by master chefs from the Hyatt Regency Trinidad, as well as top local chefs. Pair those with premium liquors and cocktails and it’s always a challenge each year to decide what I want to try first, and in what order!
Pro Tip: Pace yourself! I’ve learned through the years that I really can’t sample everything! Trust me, I’ve tried.
This year, as I stepped into the festivities, I was immediately greeted by the familiar sights and sounds that have come to symbolize Hyatt LIME, as well as this glass of bubbly from Dacastello Prosecco. From the colorful decorations to the tantalizing aromas wafting through the air, it was clear that this year’s event would be no exception to the unforgettable experiences of years past.
One of the unique markers of LIME is its dress code. All-white with a “splash” of lime (green). Although not strictly enforced the vast majority of patrons enthusiastically adhere to these guidelines and I love watching the many expressions and interpretations of the theme modeled by men and women alike. As I wander through the bustling crowds, what always strikes me most is the diversity of the patrons. People of all ages, backgrounds, and physical abilities together in one space, united by their love of great food, great music and great company. It’s truly heartwarming to witness such an inclusive and joyous ambiance year after year.
This diversity is also present in the dishes presented. From traditional legacy fare that pays homage to our rich cultural heritage to adventurous fusions with international favorites, there’s something to tantalize every taste bud. Whether you’re craving savory doubles, indulgent jerk chicken, or even piping hot ramen, Hyatt LIME has it all!
Trinidad Doubles “is life”!
Over the past 7 years I have developed an approach to the night’s events that works for me. Although most of the highlights of the evening occur after dark, I enjoy arriving before sunset. This allows me to get on-site parking and to take a leisurely approach to the evening. Not only do I get to enjoy the stunning waterfront sunset, I am also able to pace my “indulgences” over a longer period. I also am able to avoid many of the inevitable long lines that can form.
One of the many things I enjoy and appreciate about Hyatt LIME is its consistent embrace of new approaches to local flavors and fusions.
I really enjoyed this fluffy bao bun filled with mouthwateringly tender sriracha chicken! The teriyaki salmon on the side was quite delicious as well.
This year the breakout surprise for me however was the oxtail ramen from 12 (a chef’s table/supper club in Arima with regular popups in Port-of-Spain). That broth y’all! It was so rich and warm and packed with umami. The noodles were chewy, the oxtail tender and almost falling off the bone. All set off brilliantly with the crisp contrasts of fresh chive and pickled tomatoes! It’s been over 2 weeks now and I’m still craving it!

As the night came to a close I was filled with gratitude for the experiences and delights I enjoyed at Hyatt LIME 2024. From the vibrant reminders of our Carnival heritage to the diverse flavors (both old and new) it was once again an evening to remember. Until next year, Hyatt LIME!
