• Mauby Bark: Three Things You May Not Know
TRINIDAD MAUBY
INGREDIENTS
12 cups water
4 pieces mauby bark (you can add a few more if desired)
1 small sprig aniseed
1 piece cinnamon
3 cups sugar (or to taste)
1 – 3 tablespoons Angostura bitters (to taste)
METHOD
1. Place all ingredients (except bitters) and 4 cups water into a saucepan and boil for 30 minutes.
2. Strain the mauby and add the additional 8 cups water. Then taste for sweetness.
3. You can add additional sugar to it if it is not sweet enough for you.
4. Add bitters
5. Bottle
Serve cold with ice.
Makes 3 bottles

I remember drinking mauby when I was a little girl. I haven’t had it since then. Nice memories!

Dad told me all about mauby ages ago. When he went to St. Vincent twenty years ago, he drank mauby all the time and really enjoyed it. He couldn’t wait to find a source of it when he got back home. But when he eventually ordered some in a restaurant in Seven Sisters Road it tasted awful.
I have the same experience with Lipton ice tea, which I drink all the time in Portugal in the Summer but can’t stand back in London. So I reckon there’s something about the temperature and the culture in which you drink something that makes it taste quite different.
funny you should mention Lipton.. my uncle in the US is always having us send him boxes of the stuff… he says ours tastes different to the American … isn’t that odd? Tho I can vouch for the fact that Trinidadian KFC is worlds above US KFC … (weird eh?)

I wanted to try making maubi myself and as i am looking at the list of ingredients i fail to see where the rice comes in. It has not been mantioned. should i boil the bark with the rice?

I’ve asked about the health benefits(if any, apart from being a ‘refreshing drink’) of mauby, only to be left with….no answer ;-(
I would love to be more active, however I am one person doing this as a labour of love and sometimes life and economic/familial responsibilities mean that commenting and updating have to take the backseat. I’m sure you understand
. Your original comment did not make your question clear which was why it remained unanswered. The only study that has been conducted scientifically on mauby states that when taken in combination with coconut milk it can help to lower blood pressure. Other than that, everything else is folklore.
