I was married for 30 years to a Trini – he passed away 5 years ago and I miss the food terribly. He was a terrific cook. Do you have a recipe for “punkin”, which is really butternut squash. It was mashed up with garlic and I don’t know what else. Also, I’d like recipes for curry channa and dall and rice.
I’ve found similar recipes in Indian cookbooks, but their techniques are not Trinidadian. It’s an entirely different taste.
