This recipe for Spicy Guava Glazed Tofu was the centerpiece of my menu for Episode 4 of “Sweet Han’: Caribbean Cooking with Sarina”. Tofu is an ingredient that many people have had unpleasant experiences with. Too often, this is because they have had it prepared without much fanfare or seasoning. You see tofu is an ingredient that benefits immensely through proper pairing, both in terms of accompanying sauces as well as using the right form of tofu for the style of the dish. For myself I find that silken tofu lends itself best to lighter sauces and more delicate flavours. Firm tofu however needs strong assertive flavours to champion its meaty texture. This recipe combines the sweetness of guava jam, the saltiness of soy sauce and the bold accents of ginger and cracked black pepper to create a result that is far from plain or boring

Spicy Guava Glazed Tofu
Serves 6
Ingredients:
2 ½ lbs tofu, diced
¼ cup vegetable or canola oil
Glaze:
1 tablespoon freshly grated ginger
2 cloves garlic, minced
1/2 cup guava jam
¼ cup soy sauce
½ cup water
1 tablespoon sesame oil
Combine ingredients in small saucepan over medium heat. Stir occasionally until jam has melted (do not boil). Let cool.
Garnish:
chopped chadon beni (culantro) or cilantro
black pepper
Directions:
1. Press tofu dry.
2. Heat oil in large non-stick skillet over medium-high heat
3. Sauté tofu until golden brown on all sides.
4. Add glaze and lower heat to low.
5. Simmer for 3-5 minutes .
6. Top liberally with chopped chadon beni and black pepper
