Mom's Curry Pumpkin, Curried Eggplant and Rice

Just a photo of a random lunch mom made recently. She also made curried chicken but I wasn’t in the mood for any :)

    Oh my!!! THIS LOOKS YUMMY!!!!!!!!!

    I see where you get your skills.

    RECIPES.. I need recipes, esp. now that I am trying to cut down on the meat.

    Did mom share her curry chicken recipe because that is still the yummiest dish I have seen in a LONG TIME!

    What is the curry of choice in Trinidad?

    The States needs your assistance…thanks!

    Ant – hehehe, thanks for the constant reminders. I really am -that- forgetful :) I will ask my mom today about the curry saim recipe :) The curry of choice in Trinidad is madras blends :) If you have any trouble locating them let me know :) I will also try to get her curry chicken recipe but until then check out this post :)
