Mmmm, this post will be a short one as I’m still digesting :) Mom’s Roasted Chicken and Jamaican Rice and Peas was out of this world this year and was accompanied by an unexpected new side dish of Baked Plantains in Orange Sauce (recipe coming soon!). I think I may have had more than a little too much. Plus I overindulged on all of the above as well :lol:

    Sarina, I just got back from a family luncheon where the hostess had liberally sprinkled cinnamon, freshly grated nutmeg and slivered almonds over plantains and baked them. The punch of the nutmeg with the sweetness of the plantain and the crunch of the nuts was amazing. Went very well with the salty ham.
