Never attempted to make a butter loaf before but based on my experience with working with it in my other breads I would have to say that Gluten is the magic ingredient in all those soft bakery breads and rolls. You can read my hot cross buns post where I talk about gluten.

Am pretty much working out the recipe as I go along as I don’t have anything formal that I am working with, rather recollections and memories But it’s fun!
