Beets. You either love them or hate them. This vibrant, juicy root vegetable seems to polarize people whenever I bring them up for discussion. As a kid I grew up drinking (and loving beet juice), but as an adult I find myself less and less able to enjoy it in cooked form. And, Jason? Well he just can’t stand them. Not even in juice form
This recent concoction really hit the spot for me, and because of its status as a nutritional powerhouse I think it probably helped to prevent the sniffles I was having from turning into an all-out cold. Poor J however could only manage a few sips before handing it back though
I am now hellbent on finding a recipe for beets that we can -both- enjoy. There’s got to be at least one out there right? If you have a recipe for beets that you think I have got to try feel free to let me know! I’m game for anything at this point

Beet ‘Cool Aid’

INGREDIENTS:
1 baseball size beet, peeled and roughly cut
2 branches of parsley (to taste)
3 large carrots
1 large Fuji Apple, peeled
juice of half a lemon
METHOD:
1. Run all ingredients through a juicer (or blender and strain).
