Baking Powder Biscuits

There is something about Sundays. The pace of life is slower, the roads are empty, the neighbourhood is quieter, and the sunshine seems slightly brighter. Sundays lend themselves to leisurely baking like no other day of the week. That’s why last Sunday I decided to make some Baking Powder Biscuits. These biscuits remind me a lot of those that you get at Kentucky Fried Chicken (at least the ones in Trinidad). They are light, crumbly and buttery. You can make them more uniform in appearance by rolling out the dough and using a cutter, however I like the freeform ‘drop’ forms so that’s why I went that route :)

Baking Powder Biscuits

Ingredients:

2 cups all-purpose flour
3 tsps baking powder
1/2 teaspoon salt (on the correct advice of a reader :) )
1/4 cup cold butter, cut up
2 tbsps chilled solid shortening
2/3 cup milk

Baking Powder Biscuits

Directions:

1. Position a rack in the center of the oven and preheat it to 425F
2. Butter the cookie sheet or cover it with parchment paper
3. In a large mixing bowl whisk together the flour, baking powder and salt
4. Cut in the butter and shortening until it resembles coarse meal

5. Add the milk and toss it in only until the dough hold together. (If the dough is becoming sticky place it in the fridge for 5 – 10 minutes)
6. Add a drop or two more milk if the dough is too powdery

7. To make drop biscuits, scoop 10 equal portions of the dough onto the baking sheet, placing them at least one inch apart

8. Bake 12 to 15 minutes until a light golden brown on top.

9. Cool on wire rack, serve warm

    Marsha – :) This one I think is very forgiving as far as baking recipes go :) (notice i ain’t post no cakes yet :lol: ) … we had an art track and home ec track? i’ve blocked out so much… i remember doing home ec for half a year and sewing the other half … both of which sucked :lol:

    Well we all had the half year of each but then in form two or three we had to choose which thing we would concentrate on…I couldn’t draw so I was stuck with home ec…
    I remember you guys coming in with drawings you did with pens and dots ..remember you and kisha etc etc…?

    Marsha – I remember Kisha :) And I remember my pens and dots :D Still have the better ones rolled up in a cupboard :) But no memory of the two going together :)

    1969 – you and Marsha (see above) will do fine together :) You are both low-carbing :) I did it for almost a year but now I just do moderation and I always cook and bake small portions of the decadent stuff so I don’t overdo it :) Sometimes you just need a little of a really good thing to stave off the cravings :D But look at me trying to talk you out of your healthiness! :D Hol’ strain :) I have some salads coming up :lol:

    i’m glad when we started secondary school it was more “modern”
    we did both home ec and wood work
    and we always did art
    up to form three anywayz

    i prefer the free form drops too!It looks more appetizing and does not look boring.

      oh that’s so awesome Veron :) sometimes things look so homogenously ‘martha stewart’ online that i figured anyone worth their foodiness would consider my drops totally tacky, but i like a little roughness and rustic character sometimes :) :lol:

    I found your site while looking for biscuits recipes. Just want to let you know …… maybe you should cut the SALT to 1/2 tsp. I made this morning, i followed the recipe and it was too salty.
    But the it came out soft and nice :)
